Chicken Taco Casserole

I really like this recipe because it was a perfect meal prep for lunch during the work week. I thought making a chicken taco casserole would have turned out weird, but it came out really good. It lets you get all the cheese melted, which is significant for a casserole.

What I think makes the recipe taste good was using the Cilantro Lime Brown rice I posted a couple of days ago! The lime flavor was perfect for the spicy salsa and Rotel I used for this recipe. The brown rice made it healthier since it contains more nutrients and more significant nutrition value. However, you can use any rice you’d like!

I used Rotel to add some tomato chunkiness to the casserole. The salsa was Willy’s Fresh Salsa because I was a little lazy! Sorry! You can totally make fresh salsa for this recipe if you like! You can even add some salsa verde to spice it up a bit.

If you’re looking to feed your familia for dinner, or a large crowd, try this casserole! If you’re not a casserole fan, pop the ingredients in a bowl and make your own burrito bowl! Either way this recipe is perfect if you need a quick fix!

Chicken Taco Casserole

  • Prep time: 15 minutes
  • Cook time: 10-11 minutes
  • Servings: 4-6


  • 2 chicken breasts
  • 4 cups cooked rice
  • 1 can Rotel
  • 1 can black beans
  • 1 cup salsa
  • 1 cup shredded cheese


Preheat oven at 350F. Cut raw chicken breast into small pieces. Next in a medium size pan, cook the chicken as desired. Once chicken is cooked, mixed in Rotel and let it simmer with the chicken until water from can evaporated. You may need to stir so chicken doesn’t burn on one side.

Next, take a 9×13 baking dish and layer rice across the bottom of the dish. After, add some cheese to the top of the rice. Next, add beans to the top of the rice. Add some salsa to the top of beans if you’d like. After the beans, add the chicken Rotel mix from the pan and layer evenly over black beans. Add cheese to the top.

Place the pan in oven and bake for about 10 minutes or until cheese is melted! Serve and enjoy!
