Every time I go to Chipotle, I have to have their cilantro brown rice! I can pass on the beans, maybe not the corn salsa either, but the rice has to be in my bowl! I thought I’d try to make my own version of the rice and I think I did a pretty decent job for the first try!
I do think I added a bit too much lime, so I am going to cut back one lime. The recipe below has the edited version.
You do not have to use brown rice! White rice is fine. The recipe below is for cooking rice on a stovetop. When you cook the rice, you want to make sure it simmers for a few minutes so you get a good texture. If you have a rice cooker, by all means, use it. Just make sure to add that juice from one lime when you are cooking your rice. This helps the rice absorb the lime juices.
I think this recipe pairs well as a Mexican side dish, or with seafood. I actually used it to make a Chicken Taco Casserole bowl I will be posting soon and it enhanced the flavor to that so well.

Cilantro Lime Brown Rice
- Prep time: 5 minutes
- Cook time: 15 minutes
- 2 cups brown rice or white rice
- 2 cups water
- 3 large limes
- 1 tbsp olive oil
- 1/4 cup chopped cilantro
- 1/4 tsp onion powder
- 1/4 tsp minced garlic
Take the two cups of brown rice and pour into a small pot. Pour two cups of water and squeeze one lime into the pot. Boil rice for about 8 minutes. Let it simmer with stovetop off for about 2-5 minutes.
In a medium-sized pan, pour olive oil, juice from two limes, cilantro, onion powder, and garlic. Mix well on medium heat. Stir in rice onto pan and mix well until all the juices have absorbed. If you feel like you need to add juice from an extra lime, feel free to do so. I like a lot of lime, so I used an extra one.
