You can never go wrong with too much cheese!

When I started preparing this recipe, I tried to follow basic rules for lemon garlic chicken. I discovered the cream cheese taste was a little overpowering for 2 garlic cloves. I maintained juice from 1 lemon for this recipe, but if you like a lemon tangy kick, you may find yourself using more juice.
This chicken can pair great with asparagus, mash potatoes or corn. I also imagine you can use this chicken to spice up a baked potato for a meal.

Cheesy Lemon Garlic Chicken
- Prep Time: 5 minutes
- Cooking Time: 20 minutes
Ingredients:
- 4 garlic cloves, minced
- 1 tbsp olive oil
- 1.5 lbs chicken breast
- 2 cups spinach (optional)
- 2/3 cup sour cream
- 8 oz (1 block) cream cheese
- 1 cup parmesan cheese
- 1 tsp paprika
- 1 tbsp oregano
- 1/2 tsp salt
- 1/2 tsp black pepper
- Juice of 1 lemon
Instructions:
Cut uncooked chicken into chunks. Mix in medium pan over stove top with minced garlic and olive oil. Stir in spinach when chicken is cooked thoroughly.
Next, add cream cheese, parmesan cheese and sour cream. Stir until all cheese has melted and has a creamy texture. Finally add in paprika, oregano, salt, pepper and lemon juice. Stir to combine all ingredients and enjoy!
Side Note: I want to emphasize that this is not an Alfredo sauce. The cheese will harden to a cheesy texture once cooled. If a sauce is desired, add 1 cup of heavy cream.
